So I've recently installed a 1680x1050 screen, but I can't seem to find that setting in IL-2 setup. Now I've selected 1280x960 but that doesn't realy work out because the center of my creen shifts to the right if I do so. Which video mode should I select so this doesn't occur anymore?

You can set the resolution manually in conf.ini, [window] section.

In your case you have to adjust following parameters:

width=1680
height=1050
ChangeScreenRes=0
FullScreen=1
SaveAspect=0
Please note that menues might not fill the whole screen though, just when you're in flight all the screen area will be utilized correctly.
