For instance say I chose Burma. What aircraft do I choose ? I would assume say maybe P-39 or P-40's for the allies and probably Japanese Army aircraft ?

I would suppose, if you wanted to be historically accurate . . . but you can choose any AC from that list you want. Totally up to you.

Is the latest VPmodpack (+ patch) compatible with SAS Selector version 5.1.1?

version 5.1.1 has some small bugs you need to download the latest stable version 5.1.2 from here

5.1.2 is fully compatible with VP mod pack and nearly all of the IL-2 Installs including stock versions. it is now a few years that I have adopted the selector as my favorite IL-2 launcher using it on my different installs without any issue and getting a general improvement in performance.
