I have tried searching for the info on the german EZ42 gryo sight. All i came up with was:

adjust sight control to right
adjust sight control to left
Increase Sight Altitude
Decrease Sight Altitude

I notice that these controls adjust the width of the dots on the sight. Can someone explain how to use this sight.

This are "wingspan" modes.

From the original EZ42 mods (created by PeaceLovinHippy & Lt.Wolf) for Ta-183 and 190Dlate:

Following wingspan modes available;

Wingspan Mode  1: Spitfire
Wingspan Mode  2: Mustang
Wingspan Mode  3: Thunderbolt
Wingspan Mode  4: Lightning
Wingspan Mode  5: B25
Wingspan Mode  6: A20
Wingspan Mode  7: IL4
Wingspan Mode  8: C47
Wingspan Mode  9: B17
Wingspan Mode 10: B24

In the 190D late you see this wingspans (this was added later to the 190Dlate EZ42 mod):
