How exactly do you couple the cars/loco together?

On your train properties, click "carriages":

This gets you to a list of available carriages on the right and chosen carriages on the left. Arrangement is self-explaining:

Take care not to make your train too long. More than 10 carriages usually won't move much and unfortunately you cannot group locomotives.
